Traditional cast iron ranges, such as an Aga range cooker or a Rayburn, are slow to reach temperature and therefore are mainly run more or less permanently. Whilst they look fantastic in a kitchen, they provided a limited range of control over their heat output and are expensive to run.

In the 1920s, Dr Gustave Dalen developed the Aga range cooker concept in Sweden. This stored heat system consisted of a heavy, well-insulated oven with a heat source (initially coal then later oil, gas and electricity) that was burned constantly to keep heating a massive griddle. The temperature stays fairly constant, although there is a large temperature gradient in the ovens, so the user controls the cooking rate by moving items up and down into the different cooking compartments. Because it takes around 6 hours to heat up this oven range, the cooker is usually kept on 24 hours a day, 365 days of the year.
